Muffin Monday: Gluten-Free Rocky Road Muffins
Well, look who’s back with the Muffin Monday Bakers? Although I still have not developed a sweet tooth, there’s nothing like baking with friends. There’s the excitement, and sometimes there is the procrastination, or the sun that won’t appear certain days.
I made half-recipe of the Rocky Road Muffins recipe An sent me. Mixed my own gluten-free self-rising flour. I used Snickers bar from Halloween Collection, and cut up a few marshmallows usually reserved for midnight stove-top roasting.
I ate one muffin pretty much as soon as they came out of the oven, some bits of marshmallows still oozing. What a delight. It was a rainy day, and the 400F oven warmed up the cottage.

- 150 grams all purpose flour [I use Bob's Red Mill Gluten-Free All Purpose Flour]
- 1 1/4 teaspoons baking powder
- 1/4 teaspoon salt
