No Macaron Secret and a Japanese Peony

Time and again, I get asked what’s my macaron secret. The secret is, there is no secret. I deflate the batter so there are no peaks when piped. Macarons are evenly spaced to bake uniformly. Oh, and I follow directions ;-) . Yes, I still follow directions.  I’m also a big fan of not so crazy colors with macarons.  Here, you can see powdered ube (purple yam, not potato).  What’s your macaron secret?

Sugarcraft Tips

  • Save fruit containers to use as petal formers.  Apple containers for bigger slightly cupped petals, and mango for rounder petals.
  • Deviled eggs dish for smaller petals.
